Remediating Without Closing
Full closure is not always necessary. Restaurants frequently phase work overnight, isolate a section of the kitchen under containment, or handle back-of-house areas between service periods.
Whether that is possible depends on the affected area and its relationship to food preparation surfaces. Work in or adjacent to prep areas requires strict containment and thorough post-work cleaning before food service resumes.
Document Everything
For a restaurant, documentation matters beyond the building. If a customer or employee later raises a health complaint, contemporaneous records showing you identified a moisture problem and had it professionally addressed are extremely valuable.
